This "Whole Wheat Jaggery Cake" is a healthier option for the classic cake. This is a delicious moist cake and a perfect side dish with your evening tea (chaai).
What if I tell you that you can bake an amazingly moist, airy and delicious cake in a pressure cooker?
What if I tell you that this cake is the cake that you can have when you are trying to loose weight?
Is'nt it really difficult to believe? This Whole Wheat Jaggery Cake is all of that.

Trust me you are going to fall in love with this cake.

In this recipe we will use wheat flour aka  aatai instead  of regular flour and substitute sugar with jaggery.

Health Benefits of Whole Wheat Flour/ Aata:


Wheat flour provides most fiber in whole grains. It is a rich source of protein, vitamins and antioxidants.
It lowers your risk of heart diseases and strokes, helps reducing obesity, lowers the risk of type 2 diabetes and helps in digestion.

Health Benefits of Jaggery/ Gur:


Jaggery aka Gur aids digestion, cleans the liver by flushing out harmful toxins, it also has some anti aeging properties, boosts immunity, if you have a piece of jaggery everyday it helps in combating PMS and menstural cramps.Although you should watch how much you consume it especially for diabetic people and those who are trying to loose weight. Have it in moderation and you are good to go.



Lets hop to the recipe now.

Dry Ingredients:
  1. Wheat flour/ aata- 1 cup
  2. Baking Soda- 1/2 tsp
  3. Baking Powder- 1 tsp
  4. Salt- 1/2 tsp
"Sift all the dry ingredients and mix it together"

Wet Ingredients:
  1. Jaggery/ Gur- 3/4 cup
  2. Warm water- 3/4 cup
  3. Cooking Oil- 1/2 cup
  4. Vanilla essence- 1/2 tsp
Optional ingredient:
  • Dry fruits

Prodecure:

  1. "Take the jaggery in a mixing bowl and add the warm water to it and stir until the jaggery dissolves completely into the water.
  2. Add the vanilla essence.
  3. Next add the oil.
  4. Now, pour the wet ingredients into the dry ingredients and mix it until it becomes lump free.The consistency of the batter should not be too runny nor should it be too thick. Add water if needed.
  5. Add dry fruits to the batter and mix.
  6. Grab a container and greese it with oil and place a parchment paper at the bottom of the container.
  7. Pour the batter into the container and tap it to get rid of any bubbles.
  8. You can sprinkle some dry fruits for decoration.
How to bake it in a pressure cooker?

If you are making the cake in a pressure cooker, take a container that fits perfectly into your pressure cooker.


Put 1 full cup of salt inside the pressure cooker and spread it evenly like shown in the picture and place a metal stand over it.


Take off the ring and the whistle of the pressure cooker close it and pre-heat it for about 10 minutes on a medium flame.


Next, carefully place the cake container over the metal stand and close it and let it cook for about 40-50 minutes on a low flame.

Check the cake once after 30-40 minutes if it is done.
(For checking the cake grab a toothpick and insert it into the cake if itcit out clean, the cake is done.)


Once done it should look something like this.

Keep it aside to cool down and have it atleast after 2-3 hours for the best taste.


Voila! our "Whole Wheat Jaggery Cake" is ready!
